Balinese tangerine marmalade has a surprising and gentle citrus character. It is called a ‘sumaga’ in Bali and is cloaked in a green outer skin. Its flavour is sensational, subtle, and bittersweet. Excellent paired with a creamy brie, or use as filling in a buttercream and sponge cake for English/Balinese afternoon tea.
Lime Ginger Marmalade is an enigma. Somehow, in the cooking process, the flavours of lime and ginger merged in a way that was entirely unpredictable. Go on, try it for yourself! This marmalade is wonderful with goats cheese, and with give a baked apple an elegant lift.
